The subfolders under /dev/mapper are actually names of Volume Groups, and the device nodes in those subfolders represent Logical Volumes. Rather then using device names (be they /dev/sdaX or /dev/mapper/something/or_other ), you should just refer to UUIDs or even labels in /etc/fstab.
